Welcome to the 2016 era of How to Philosophize with Cake, everyone, and already things are looking...fantastically unhealthy.

Well! Not much has changed, has it?

In the same vein as that decadent gingerbread cookie dough peppermint bark I posted a few days ago, this recipe takes chocolate bark to a whole new level. You’ve got semisweet chocolate, with crunchy ruffled potato chips folded in, a sweetened layer of peanut butter in the center, plus more potato chips and melted peanut butter on top. What more could one want in life?

Also like that peppermint bark monstrosity, this bark is pretty messy. If you’re not careful, those crushed potato chips WILL go everywhere. They will not be stopped. Not even by a generous drizzle of melted peanut butter.

There on that red napkin is my ideal midnight snack.

And I’ll have you know that, as a last-minute Christmas gift, this was a big success. I originally wanted to make How Sweet It Is’pretzel bark, but I didn’t have any pretzels on hand—so I used my dad’s favorite snack, ruffled potato chips. Worked fabulously. He approved. Past tense—because it’s all gone now, of course.

Here’s the recipe.

Peanut butter-stuffed potato chip chocolate bark

Adapted from How Sweet It Is

Ingredients

454 grams • semisweet chocolate • 16 ounces

256 grams • creamy peanut butter • 1 cup

80 grams • powdered sugar • 2/3 cup

2 grams • vanilla extract • 1/2 teaspoon

85 grams • potato chips, roughly crushed • 3 ounces

Melted peanut butter, to taste

Directions

Melt half of the chocolate in a microwave in a large bowl in 30 second bursts, stirring in between. Once completely melted, add 14 grams • 0.5 ounces of crushed potato chips to the chocolate and stir to combine. Spread the mixture in an even layer on a baking sheet lined with parchment paper. Chill in refrigerator until chocolate is firm.

Combine peanut butter, powdered sugar, and vanilla in a medium bowl and stir until well-combined. Spread peanut butter over the chocolate layer.

For the top layer of chocolate, repeat procedure with chocolate and potato chips and spread on top of the peanut butter layer. Before the chocolate hardens, sprinkle remaining crushed potato chips on top. Drizzle with melted peanut butter, to taste. Break into pieces and munch.

If you have any leftovers (and I doubt it), keep chilled so the chocolate doesn’t melt.

  5. Holy yum! This might as well be crack as far as I'm concerned because I'm pretty sure after taking one bite, I would run off with the whole batch so I could eat it all by myself. Chocolate and peanut butter is my weakness and with the salty crunch of potato chips... that sounds like pure heaven to me.
